Stored templates and variable substitution: versioning a template without breaking the sends already referencing it, previewing with real data, and escaping values that arrive from user input. Also the question of where templates should live at all - keeping them in the platform means marketing can edit them, keeping them in your repository means they are reviewed and rolled back like any other code. Most teams end up splitting it, with transactional templates in the codebase and everything else managed outside it.
